Spelt White
Starter
500g (1:1 overnight)
500g (1:1 overnight)
Mix
900g white flour
125g spelt flour
50g rye flour
600g water
100g buttermilk 1%
50g maple syrup
5g yeast
45g French sea salt

Method
- Mix all ingredients except salt for 10min.
- Add salt and mix for an additional 5min
- Pour dough into oiled plastic container and fold once.
- Cover and let sit for 30min in a warm environment
- Repeat folding 2 more times with 30min intervals
- Bake at 450 degrees for 20 minutes in a dutch oven.
- Remove the cover and bake for an additional 15 minutes or until inner temperature reaches 98C.
