Spelt White

Starter
500g (1:1 overnight)

Mix
900g white flour
125g spelt flour
50g  rye flour

600g water
100g buttermilk 1%

50g maple syrup
5g yeast
45g French sea salt












Method
  • Mix all ingredients except salt for 10min.
  • Add salt and mix for an additional 5min
  • Pour dough into oiled plastic container and fold once.
  • Cover and let sit for 30min in a warm environment
  • Repeat folding 2 more times with 30min intervals
  • Bake at 450 degrees for 20 minutes in a dutch oven.
  • Remove the cover and bake for an additional 15 minutes or until inner temperature reaches 98C.
